Decrease is Shown in Butter Making But An Increase Is Made in Cheese Manufacturing.
The statistics in regard to the dairying interests in the county as returned by the assessors to County Clerk L.F. Shoemaker show a decrease in the butter making industry and an increase in the manufacture of cheese.
There are twenty-one creameries in the county and thirty-one cheese factories, one more cheese factory than last year. The value of the creameries is placed at $37,580 and the cheese factories $7,250. The number of patrons of creameries this year is 2110 a decrease over last year of 68, while the patronage of the cheese factories was increased from 931 in 1906 to 966 in 1907. The number of cows contributing for creamery supply is 18, 965 while in 1906 the number was 19,247 showing a decrease of 482.
The number of cows contributory for supply the cheese factories has been increased 446. In 1906 the number was 8720 while in 1907 the number is 9166.
